Mashed Cauliflower

Total Time 30 minutes
Makes 2 Cups
1 pound of cauliflower
3 Tablespoons butter
2 Tablespoons Heavy Cream
Salt & pepper to taste
Chopped fresh chives for garnish
Boil cauliflower in salted water until fork tender. Drain and dry in a hot
pan over medium heat. Do not brown. In food processor, blend cauliflower
with butter and cream until smooth. Garnish with chives.
