HONEY MUSTARD TENDERLOIN

HONEY MUSTARD TENDERLOIN


½ of a 16-ounce package peeled baby carrots

12 tiny new potatoes, halved

1/3 cup honey mustard

2 tbsp. olive oil or cooking oil

½ tsp. garlic pepper

¼ tsp. seasoned salt

1 (12- to 16-ounce) pork tenderloin


Preheat oven to 425 degrees. In a large covered saucepan, cook carrots and potatoes in boiling water for 2 minutes; drain. Set aside.

In a small bowl, combine honey mustard, olive oil, garlic pepper and seasoned salt. Spread half of the mixture on the tenderloin. Place tenderloin in a shallow roasting pan. Toss carrots and potatoes with remaining mustard mixture; spoon vegetables around tenderloin.

Roast, uncovered, in the preheated oven for 25 to 35 minutes, or until an instant-read thermometer inserted into thickest part of the tenderloin registers 160 degrees, stirring the vegetables once. Makes 4 servings

Yogurt Chicken Curry - 4.99g Carbs

4 skinless, boneless chicken breast halves - cut into bite size pieces
1 cup water
Salt and pepper to taste
1 cup yogurt
1 tsp mild curry powder

1. Place chicken and water in a medium saucepan and simmer over
medium low heat for about 15 minutes, until chicken is cooked
through and no longer pink inside.

2. When water is almost reduced, season chicken with salt and
pepper to taste. In a small bowl, combine yogurt and curry
powder and mix together. Stir this mixture into saucepan until
all chicken pieces are coated, then simmer for another
5 minutes to heat through and marinate.

Chocolate Chip Banana Bread

1/3 cup butter or stick margarine, softened
3/4 cup sugar
1 egg
1 cup mashed bananas
2 cup all purpose flour
2-1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 cup pecans or walnuts, chopped
1/2 cup chocolate chips, or to taste
1/2 cup buttermilk

Preheat oven to 350º F.

Cream butter and sugar. Mix in egg and banana.

Stir together flour, baking powder, baking soda, salt, nuts and chocolate chips. Add this mixture
to creamed mixture alternately with buttermilk. Stir until just blended.

Pour batter into a greased and floured 9" loaf pan.

Bake for 65 minutes, or until bread tests done. Cool in pan for about 5 minutes, then turn out onto
a wire rack.

Makes: 1 loaf

Dublin Potato Salad

2 TB vinegar
1 tsp. celery seeds
1 tsp. mustard seeds
3 large potatoes, peeled cooked and diced
2 tsp. sugar
2 cups cabbage, finely shredded
1 can (12 oz.) corned beef, chilled and diced
1/4 cup green onions, thinly sliced
1/4 cup dill pickle, chopped
1 cup mayonnaise or Miracle Whip salad dressing
1/4 cup milk

Combine vinegar, celery seeds and mustard seeds and set aside.

Peel and cook potatoes in enough boiling salted water to cover for 30 to 40 minutes or until done. Drain, cool and dice.

While potatoes are still warm, drizzle with the vinegar, seed mixture.

Sprinkle with sugar and 1/2 teaspoon of salt. Chill.

Before serving add cabbage, corned beef, onion, and pickle to potatoes.

Combine mayonnaise, milk, and 1/2 teaspoon salt.


Pour mayonnaise mixture over corned beef mixture and toss lightly.

Serves: 6 to 8.

Lemon Poppyseed Cookies

3/4 cup (1 1/2 sticks) unsalted butter, softened
1 cup granulated sugar
2 tablespoons poppyseeds
2 teaspoons finely grated lemon zest
2 cups flour
pinch salt

With an electric mixer, cream butter and sugar until light and
fluffy. Mix in poppyseeds and lemon zest. Add flour and salt and mix
well to make a stiff dough.
Divide dough in half and roll each piece in wax paper to make a
cylinder about 2 inches in diameter and 6 inches long. Chill dough
until firm, at least 4 hours.

Preheat oven to 350 degrees. Slice dough into rounds about 1/4-inch
thick. Arrange about 1 inch apart on greased baking sheets. Bake 12
minutes, or until edges are lightly browned. Let cookies cool on
baking sheet for a few seconds, then remove to a wire rack and let
cool completely.

Turkey Burgers

1 lb. ground turkey breast
1/4 cup egg substitute or 1 egg
1/4 cup dry bread crumbs
1 tsp. Heinz 57 or A1 steak sauce
1 tsp. spicy brown mustard
1/4 tsp. dried thyme
1/4 tsp. ground black pepper

In a bowl, combine the first 7 ingredients. Shape into four burgers (for easier shaping,
use cold wet hands or disposable plastic gloves). Pan fry, grill or broil until no longer pink.

4 hamburger buns, split
Lettuce leaves, red onion rings, and tomato slices, for garnish

Serve on buns with lettuce, onion rings, and tomatoes.

Southern Sweet Potato Chicken

Southern Sweet Potato Chicken

Serves 4

Ingredients:

4 skinned chicken breast halves
2 tablespoons vegetable oil
1 cup evaporated milk
2 tablespoons honey
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 16 oz. can sweet potatoes in syrup, drained, reserve 1/4 cup syrup
1/4 cup raisins

Procedure:

Preheat your oven to 350 degrees.

In large skillet, place oil and heat to medium temperature. Add chicken , cook, about 10 minutes or until lightly browned on both sides.

Drain chicken on paper towels and place in 13 X 9 X 2-inch baking dish.

In a small bowl, mix together evaporated milk, honey, salt, nutmeg and cloves. Pour over chicken. Bake for 10 minutes.

Remove from oven and arrange sweet potatoes and raisins around chicken. Pour reserved 1/4 cup syrup over chicken.

Return to oven and bake about 40 minutes or until fork can be inserted in chicken with ease.
