Amazing Pork Tenderloin in the Slow Cooker

1 (2 pound) pork tenderloin
1 (1 oz) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste

Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat.

Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible.

Sprinkle with pepper, cover, and cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.

Erma Bombeck's Dip
Ingredients

1/2 lb. lean ground beef
1/2 cup each finely chopped onion, coarsely grated American cheese
1 can (8 oz.) tomato sauce
1-1/2 tsp. chili powder
1/2 tsp. salt
1 can (8 oz.) pork and beans, mashed
1/4 cup chopped black olives
Directions
Using a nonstick skillet, cook beef and 1/4 cup onions for 5
minutes on medium high. Stir often until beef is lightly browned.
Stir in sauce, chili powder and salt. Bring to simmer. Stir in beans
and simmer 3 - 4 minutes. Turn into chafing dish. Sprinkle with
cheese, olives and rest of onion. Serve with taco chips.

Huevos Rancheros Stacks

12 corn tortillas
6 cups enchilada sauce
2 cups grated cheddar cheese
8 eggs, scrambled, poached or fried
2 cups chopped onion or green pepper
Directions
Dip 3 corn tortillas in enchilada sauce to coat. Stack 3
tortillas on four separate plates. Sprinkle on some cheese. Place 2
cooked eggs on each stack. Drizzle on more sauce and sprinkle onion
or green pepper over top of each stack. Top with more cheese.
Microwave each plate 60 seconds, or until hot and bubbling.
Makes 4 servings.

Sweet Potato Pecan Pancakes

2 cups all-purpose flour
1/2 teaspoon salt
1-1/2 teaspoons baking soda
1 teaspoon brown sugar
2 Tablespoons melted butter
2 cups buttermilk
1/4 cup chopped pecans
1 cup mashed cooked sweet potatoes
1 teaspoon nutmeg
2 teaspoons cinnamon
3 eggs (separated)

Mix together all ingredients. Fold in 3 egg whites, well beaten.
Mixture will be lumpy - DO NOT overmix. Bake on hot griddle (in 1/4
cup amounts for each pancake) in small amount of butter or baking
spray for 2 minutes on each side, or until light golden brown.

Slow Cooker Beef with Mushrooms

2 medium onions, thinly sliced
1/2 lb. mushrooms, sliced, or 2 cans (4 oz each) sliced mushrooms, drained
2 1/2 lb. beef flank or round steak
Salt to taste
1 T. Worcestershire sauce
1 T. oil
Paprika to taste

Place sliced onions and mushrooms in slow cooker. Score top of meat about
1/2" deep in diamond pattern. Season with salt and pepper. Rub in
Worcestershire sauce and oil. Sprinkle top with paprika. Place meat on top
of onions. Cover. Cook on low 7 to 8 hours. To serve, cut beef across grain
in thin slices. Top with mushrooms and onions. Serve 6
