Low-Fat Roasted Cauliflower

Low-Fat Roasted Cauliflower

This method of preparing cauliflower is very simple and extremely delicious.

If you have never roasted cauliflower, try it now!



1 medium head cauliflower (about 2 pounds)
1 teaspoon sesame oil
1/2 teaspoon coarse salt
1/4 teaspoon coarsely ground black pepper
Preheat oven to 400°F. Rinse cauliflower; cut into quarters. Cut off and
discard leaves and cores; cut quarters into 1/4- to 1/2-inch-thick slices.
In a large bowl or resealable plastic bag, mix together cauliflower slices,
sesame oil, salt, and pepper. Spread in a single layer in a non-stick baking
dish or rimmed baking sheet. Bake approximately 20 to 25 minutes, turning
every 10 minutes, or until cauliflower is browned or carmelized on edges and
tender. Remove from oven and serve warm or at room temperature.
Makes 2 servings.

Popeye's Famous Fried Chicken

6 cups vegetable oil or olive oil, for frying
2/3 cup all purpose flour
1 TB salt
2 TB ground white pepper *
1 tsp. cayenne pepper
2 tsp. paprika
3 eggs
1 frying chicken with skin, cut into 8 pieces, discard backbone or use later for soup

Heat oil over medium heat in a deep fryer or in a deep cast iron skillet on the stove.

Combine the flour, salt, peppers, and paprika in a bowl.

In another bowl, break eggs and beat until well blended.

Check temperature of oil by dropping a pinch of flour mixture in pan. If the oil bubbles
rapidly around the flour, it will be the right temperature.

Dip each piece of chicken into eggs; then coat generously with the flour mixture. Drop each
piece into the hot oil and fry for 15 to 25 minutes or until the chicken is a dark golden brown.

Drain chicken on paper towels and serve warm.

Makes 8 pieces.

* Note: You really need to use the white pepper to get the right taste to this chicken.

12 eggs
1 lb confectioners' sugar
1/2 tsp salt
1/4 cup vanilla extract
8 c evaporated milk
3 c water
4 c dark rum, brandy, bourbon or rye

Beat eggs until light in color. Beat in gradually the sugar, salt and
vanilla extract. Dilute milk with water, and stir into egg mixture. Stir in alcohol. Cover tightly and let it ripen in the refrigerator for 24 hours. Stir again and serve sprinkled with freshly grated nutmeg.

BBQ Beef

BBQ Beef
1 to 1 1/2 lb. roast (chopped)
1 to 1 1/2 c. chopped onions
1 1/2 to 2 c. chopped green peppers
1 (6 oz.) can tomato paste
1/4 c. packed brown sugar
1/8 c. dark vinegar
1 tbs. chili powder
1 tsp. salt
1 tsp. Worcestershire sauce
1/2 tsp. dry mustard
Set slow cooker on High. Add ingredients one at a time in order (roast,
chopped onions, chopped green peppers, tomato paste, brown sugar, vinegar, chili
powder, salt, Worcestershire sauce, dry mustard). Do not mix or stir.
After 1 hour, turn to low and cook 8 to 10 hours.
Stir off and on for last hour. Shred and serve on warmed buns.

Creamy Ranch Potatoes for the Slow Cooker

Slow Cooker Creamy Ranch Potatoes Recipe

2 pounds small red potatoes, quartered
1 8 oz. pkg., cream cheese, softened
1 envelope buttermilk ranch dry salad dressing mix
1 can condensed cream of potato soup

Place potatoes in a 3 1/2 quart crockery cooker. Ina small bowl, combine cream cheese and salad dressing mix. Stir in soup. Add to potatoes. Cover; cook on low heat setting for 7 to 9 hours or on high heat setting for 3 1/2 to 4 1/2 hours. Stir to blend before serving. Makes 6 servings

Creamy Coleslaw from Betty Crocker

1/2 c. mayonnaise or salad dressing
1/4 c. cup sour cream
1 tbl. tablespoon sugar
2 teaspoons lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 medium head cabbage, finely shredded or chopped (4 cups) - or 1
bag slaw mix
1 small carrot, shredded (1/2 cup)
1 small onion, chopped (1/4 cup)
Mix all ingredients except cabbage, carrot and onion in large glass or
plastic bowl. Add remaining ingredients; toss until evenly coated.
Cover and
refrigerate at least 1 hour to blend flavors. Cover and refrigerate
any remaining salad.

SNOW ICE CREAM

SNOW ICE CREAM

1/2 cup milk
14 oz. can sweetened condensed milk
3 lg. eggs
1/4 tsp. salt
1 cup sugar
1 Tbsp vanilla
2 gallons (or more) very fresh, light fluffy snow

Put milk, sweetened condensed milk, eggs and salt in saucepan.

Mix with a wire whisk until smooth. Cook over medium heat, stirring constantly with the whisk until the mixture just begins to boil.

Remove from heat and add sugar and vanilla. Cover and let cool in the refrigerator.

When the mixture is about room temperature, pour it into a large mixing bowl. Add 1 quart of snow and mix.

Continue adding more snow until the mixture is very thick and looks like ice cream. Be careful not to add too much snow. Serve right away.
10 servings.

"Beastmaster, The" Wild Animal Crackers

Lions, and Tigers, and Bears...oh, my... they are just cookies silly!

You will need:

1 cup whole oats
1 tbsp. yellow corn meal
3 tbsp. honey
2 tsp. finely chopped lemon zest
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/4 cups all purpose flour
1/2 tsp. baking soda
1/2 cup softened unsalted butter
8-10 tbsp. buttermilk

1 leopard, for strength 1 hawk, for sight and 1 alligator, for some
snappy new loafers

Directions:

1. Preheat the oven to 375?F.

2. Grind oats and corn meal in a blender or coffee grinder until very fine.

3. Transfer to a mixing bowl and add the honey, chopped lemon zest, salt, cinnamon, flour, and baking soda.

4. Add the butter in pieces and cut into the mixture with a pastry blender or 2 knives.

5. Add the buttermilk and knead well to form smooth dough.

6. Roll as thinly as possible and cut with various animal-shaped cookie cutters. Transfer to an ungreased cookie sheet and bake 10-15 minutes, until light brown and subdued.

7. Reassure annoying animal rights activists it's o.k. to eat these animal crackers because no actual animals were harmed in the production of this dish. (But feel free to remind them that unless someone cheerfully volunteers to clean up, you can't guarantee the safety of any real animals in the area.
