South Philly Hamburger

1-1/2 - pounds ground chuck
1 - egg yolk
1/4 - cup grated onion
1 - large clove garlic minced
2 - teaspoons dried crushed basil
1/2 - teaspoon oregano
1/3 - teaspoon salt
1/4 - teaspoon pepper
2 - provolone slices
4 - hamburger buns

Prepare a medium fire in your grill.

While the grill is heating, mix the ground chuck, egg yolk, onion,
garlic, basil, oregano, salt, and pepper in a medium mixing bowl.
Mix lightly, using your hands. (Remember wash your hands before and
after handling the ground beef.)

Place the hamburger patties on an oiled grill grid. Grill directly
over the heat for 5 to 7 minutes per side for medium. Adjust your
times for rare to well done. (A reminder from the US Dept of
Agriculture - when cooking meat, cook it to 160 degrees inside
temperature or the center is no longer pink.)

Toast buns split side down on the edges of the grill grid until
lightly brown.

Place provolone on top of each burger 2 minutes before burger is
done. Grill with cover down until the cheese melts.

Grill over medium-hot coals for a total of 12-15 minutes, turning to
brown evenly. Serve chops immediately.

Famous Recipes - Chicken salad

This is not really different, but it is the best chicken salad recipe I?ve
ever used. You could add other things if you like, such as grapes, apples
or nuts, but I like it just the way it is. It is especially good on
croissants. It is not so thin that it runs out all over your hands, and I
often use it for parties in small cream puffs or mini croissants.



1 lb. chicken breasts, cooked

? c. minced celery

2 t. minced green pepper

1 t. salt

? t. pepper

? c. mayonnaise

2 t. chopped pimiento



Mince the chicken and mix well with other ingredients. Refrigerate until
ready to use.

When Pigs Fly!

Serves 8

4 pork chops, cut into 3/4 inch cubes
2 teaspoons vegetable oil
14 ounces hot style ketchup
3 tablespoons honey
2 tablespoons lemon juice
2 1/2 teaspoons hot pepper sauce
1 teaspoon crushed thyme
1/2 teaspoon crushed rosemary
1/2 teaspoon lemon pepper

In a large skillet heat oil over medium high heat. Cook and stir pork cubes
for 4 to 5 minutes or until
pork is just done. Remove excess fat from skillet; reduce heat to low.
Add remaining ingredients to skillet, stirring to coat pork cubes. Cover and
cook about 1 minute or
until heated through. Transfer to warm serving dish; serve with wooden
picks.

Hot and Spicy Chili Recipe

If you like chili hot then try this spicy chili recipe!

Ingredients
• 12 oz tomato paste
• 16 oz tomato sauce
• 3 24oz cans red kidney beans (drained)
• 6 Tablespoons garlic powder
• 3 Tablespoons onion powder
• 2 Tablespoons ground cumin
• 2 Tablespoons parsley
• 2 Teaspoons oregano
• 1/2 Teaspoon salt
• 1/2 Teaspoon ground black pepper
• 1 Tablespoon chipotle powder
• 1 Teaspoon habenero chile powder
• 1 medium onion, chopped
• 4 whole red habeneros (deveined, deseeded and chopped)
• 6 jalepenos (deveined, deseeded and chopped)
• 2 New Mexican chiles (deveined, deseeded and chopped)
• 1/2 pound elbow macaroni
• 1 pound steak of choice
• 1 pound ground beef
• 1 pound ground pork
• 6 oz beer (1/2 can)



Directions

Saute the onion in a small amount of olive oil in a large pot until translucent. Bring to a simmer the tomato paste, tomato sauce, kidney beans, garlic powder, onion powder, cumin, chili powder, parsley, oregano, salt and pepper, chipotle powder, habenero powder, habeneros, jalapenos, New Mexican chiles, and dry pasta. while this is simmering, grill steak and brown beef and pork in a large skillet. Drain the meat, and season with salt and pepper. Cut steak into very small pieces and add steak, beef and pork to sauce along with beer. Cook for 30 minutes. Serve with grated cheese and chopped onions.

Tortilla Soup

Makes: 4 servings Prep: 10 minutes Cook: 30
minutes Bake: at 400ºF for 10 minutes

1 tablespoon olive oil
1 medium-size onion, finely chopped
1 clove garlic, finely chopped
2 tomatoes, peeled, seeded, and chopped
2 jalapeño peppers, seeded and finely chopped
1 teaspoon black pepper
3/4 teaspoon cumin seeds, crushed
4 corn tortillas, cut into 1/8-inch-wide strips
Pinch chili powder
1 large can (46 ounces) chicken broth (5 3/4 cups)
1/4 cup shredded Monterey Jack cheese
2 tablespoons chopped fresh cilantro

Heat oven to 400ºF. Heat oil in large saucepan over medium heat. Add
onion and garlic; sauté until softened, about 8 minutes. Add
tomatoes, jalapeños, black pepper, and cumin; cook 10 minutes.
Meanwhile, sprinkle tortilla strips with chili powder. Place on
baki! ng sheet and toast for 10 minutes or until crispy. Add broth to
saucepan; simmer 10 minutes. Ladle into 4 soup bowls. Sprinkle with
tortilla strips, cheese, and cilantro.

Turkey Casserole Pie

3/4 cup Bisquick Reduced Fat Baking Mix
2/3 cup Carnation Nonfat Dry Milk Powder
2 eggs or equivalent in egg substitute
1 tsp dried parsley flakes
2 tsps poultry seasoning
1 cup water
1-1/2 cups (8 ozs) diced cooked turkey breast
1 cup chopped celery
1/2 cup finely chopped onion

Preheat oven to 375 deg F. Spray a deep-dish 10-inch pie plate with
butter-flavored cooking spray. In a large bowl, combine baking mix, milk
powder,
eggs, parsley flakes, poultry seasoning and water. Mix well using a wire
whisk.
Stir in turkey, celery and onion. Pour mixture into prepared pie plate. Bake
for 35 to 40 minutes or until knife inserted in center comes out clean.
Place
pie plate on a wire rack and let set for 5 minutes.

Serves 6

Black Pepper Beef & Cabbage Stir Fry - 9.4g Carbs, 2.9g Fiber, 3.5g Sugar

2 Tbsp vegetable oil
4 cloves garlic, chopped
1/2 pound ground beef
1/2 small head cabbage, shredded
1 red bell pepper, cut into strips
2 Tbsp soy sauce (Low Sodium is a better choice here. Gloria)
1 tsp cornstarch
1/2 cup water
1 tsp ground black pepper

1. Heat a wok or large skillet over medium-high heat, and add oil.
Saute garlic for about 5 seconds, then add ground beef. Stir-fry
until beef is evenly brown. Stir in cabbage and pepper, and cook
until vegetables are tender, and beef is fully cooked. Stir in
soy sauce. Mix together cornstarch and water, and stir in.
Season with pepper. Cook, stirring, until sauce has thickened.

Slow Cooker-Salmon with Beer
Makes 4 servings

4 salmon fillets ( 6 ounces each)
Salt and black pepper I cup Italian dressing
3 tablespoons olive oil
I red bell pepper, sliced
I yellow bell pepper, sliced
1 orange bell pepper, sliced
1 large onion, sliced
1/2 teaspoon dried basil
2 cloves garlic, minced
1 teaspoon lemon zest
2 cups fresh spinach leaves, washed and stems removed 3/4 cup amber beer
1/2 lemon, cut into 4 wedges
Additional salt and black pepper (optional)

1. Rinse salmon fillets and pat dry with paper towels. Salt and pepper both
sides of fillets. Place in casserole dish and pour Italian dressing over
fillets. Cover with plastic wrap and refrigerate 30 minutes, or up to 2
hours. Discard marinade.

2. Pour olive oil into 5-quart slow cooker and lay salmon fillets on top,
stacking as necessary Cover with peppers, onion, basil, garlic and lemon
zest. Cover with spinach leaves. Pour beer over top. Cover and cook on HIGH
11/2 hours.

3. Remove fillets to platter and top with vegetables. Squeeze lemon over top
of salmon and season to taste with additional salt and pepper, if desired .

Lemon Ginger Scones

Lemon Ginger Scones - 16g Carbs

2 cups all-purpose flour
1/4 cup sugar
1 tsp baking soda
1 tsp cream of tartar
1/4 cup finely chopped, crystallized ginger (found in the spice section)
2 tsp grated lemon zest
1 cup lowfat buttermilk (2%)
1 Tbsp canola oil
1 large egg
1 Tbsp water
1 Tbsp sugar

Preheat oven to 350 F.

In a medium bowl, mix together flour, 1/4 cup sugar, baking soda,
and cream of tartar. Stir in ginger and lemon zest.

In a small bowl, combine buttermilk and oil and add to the dry
ingredients, stirring just until blended. Turn the slightly sticky
dough out onto a lightly floured work surface and pat to 1/2-inch
thickness. Using a floured, 4-inch round cutter, cut out the dough.

Cut each circle in half to make half-moons. Reroll and cut the
scraps, handling the dough as little as possible. Place scones
onto a baking sheet that has been lightly coated with nonstick
cooking spray.

In a small bowl, lightly beat the egg with the water. Brush the
tops of the scones with the egg glaze. Sprinkle scones with
1 Tbsp of sugar.

Bake for 15 to 20 minutes, or until the tops are golden and firm
to touch. Serve warm.

Crockpot Beef with Mushrooms

Crockpot Beef with Mushrooms and Red Wine Gravy (5 Points)

1 1/2 lbs stew meat, trimmed of all fat, cut into one inch cubes
2 onions cut into half inch wedges
1 pkg. sliced fresh mushrooms, (8 oz.)
1 pkg. beefy onion dry soup mix
3 tbsp cornstarch
Salt and pepper to taste
1 1/2 cups dry red wine

Place beef, onions and mushrooms in a 4-quart or larger slow cooker. Add dry soup mix. Sprinkle with cornstarch and salt and pepper to taste. Pour wine over all. Cover and cook on low 10 to 12 hours or high 5 to 6 hours. Stir well before serving.

6 Servings.

Crockpot Wild Rice Pilaf

1-1/2 cups uncooked wild rice
1/2 cup finely chopped onion
1/2 tsp. salt
1/8 tsp. pepper
14 oz. can ready to serve chicken broth
2 cups water
4 oz. can sliced mushrooms, drained
1/2 tsp. dried thyme leaves

Spray 4-6 quart slow cooker with nonstick cooking spray. Rinse rice and drain well.
Combine in crockpot together with green onion, salt, chicken broth and water and
mix well. Cover crockpot and cook on high for 3-4 hours.
Add mushrooms and thyme and stir gently. Cover and cook on low for 30-60 minutes
longer, until wild rice pops and is tender. 6 servings

Crock Pot Posole
A Southwestern make-ahead soup filled with chicken, hominy, tomatoes, and herbs.

2 cans (14-1/2 oz. ea.) golden hominy, rinsed and drained
1 can 4 oz.) chopped green chili peppers, undrained
1/2 cup onion, chopped
2 cloves garlic, minced
1 lb. boneless, skinless chicken breasts and/or or thighs, cut into 1" pieces
1 can (14-1/2 oz.) diced tomatoes, undrained
2 cans (14-1/2 oz. ea.) reduced sodium chicken broth
1 tsp. dried oregano, crushed
1/2 tsp. ground cumin
2 TB fresh cilantro, chopped
Fat free dairy sour cream. optional

Place hominy, chili peppers, onion, garlic, chicken, tomatoes, chicken broth, oregano,
and cumin in a 3-1/2 to 5 quart crock pot.

Cover and cook on LOW heat setting for 5 to 6 hours or on HIGH heat setting for 2-1/2 to 3 hours.
Stir in cilantro.

Garnish each serving with fat free sour cream, if desired.

Makes 8 to 10 servings.

Famous Recipes - Chicken Garlic Sauté

Chicken Garlic Sauté

6 boneless, skinless, chicken breast
1/2 cup flour
2 Tablespoons olive oil
4 Tablespoons small diced onions
5 Garlic cloves chopped
1/2 cup dry white wine
1 Tablespoon lemon juice
1 Cup chopped tomatoes
1/2 cup chicken stock
2 teaspoons crushed basil

Dredge chicken breast in flour and sauté in olive oil,
browning them. Remove from the pan and finish cooking
the breast in a 375-degree oven. Add the onions and
garlic and sauté until the onions are translucent.

Deglaze the pan with the white wine and lemon juice.
Then add the tomatoes, chicken stock and crushed
basil. Simmer for 8-10 minutes. Serve and enjoy.
