Famous Recipes - Chili Recipe

Chili Recipe

Serve this with cornbread or saltines.

2 dried hot red peppers, seeded and diced
3 cups water
2 pounds stew beef or lean chuck, cut in small pieces, about 1/4-inch to
1/2-inch cubes
3 tablespoons oil
2 medium onions, chopped
2 cloves garlic, minced
2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon chili powder
2 cans (approx. 16 ounces each) pinto beans, drained

Simmer dried peppers in 1 cup water 10 to 15 minutes, or until soft and
plump; drain and cool peppers; cut open and remove seeds and membranes. Finely chop
peppers; set aside (wear gloves if peppers are very hot). Saute meat in hot
oil until browned. Add onions and garlic; sauté until tender. Add 2 cups of
water, salt, pepper, cumin, chili powder, and diced red peppers. Cover and simmer
for 2 hours, or until beef is very tender. Heat beans in a separate saucepan.
To serve, spoon beans into a bowl and top with meat mixture. Or, add beans to
meat mixture near the end of cooking.

Chicken Korma Recipe

Chicken Korma


Ingredients

4 each chicken breasts boned, halves
1/2 cup safflower oil
1/4 cup butter clarified
6 medium onions
3 each garlic cloves
1 1/2 teaspoon ginger preferably furnish
20 each cloves whole
12 each cardamom seeds green, whole, cracked or use 2 t ground cardamom
5 each bay leaves
1 teaspoon salt
1 1/2 teaspoon coriander ground
1/2 teaspoon cayenne pepper or more to taste
8 ounces yogurt, plain plain
1/2 cup water
1/2 cup milk


Cut the chicken breasts into bite-size pieces and set aside. Peel the onions and chop them fine. You should have about 3 cups of onion. Mince the garlic and add to the bowl of chopped onions.

In a big frypan that has a lid, heat the butter and oil, then saute the onions and garlic for about 10 minutes, until the first hint of browning. Use "medium-high" heat.

Crack the cardamom seeds between your fingers, just to get the shell open. Add them to the pan. Add the ginger, cloves, bay leaves and salt. Saute until the onions are nice and brown, about 5 more minutes.

Mix the coriander and red pepper with the yogurt. Add the yogurt to the frypan, stirring as you pour, slowly enough that the onion doesn't stop bubbling. It could take several minutes to do this, depending on the diameter of your frypan. When the last of the yogurt dries up, add the chicken pieces and brown them. Add 1/2 cup water, reduce heat, cover and simmer 20 minutes.

Stir in the milk and turn off the heat. It needs to sit a few minutes to let the flavors blend. The longer you let it sit after cooking, the better it will taste (up to several hours).

While the chicken is sitting, cook some rice. Saffron rice to go with this dish.

Fish out the bay leaves and as many of the whole cloves as you can find, before serving. Check to make sure it is moist enough (it should have the consistency of applesauce). Reheat over low heat.

Cabbage Bean Soup

3 tbs olive oil
3 leeks, chopped
1 onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 clove garlic, minced
2 cups vegetable broth
1/2 lb green beans
3 cups Italian plum tomatoes, chopped
1 lb green cabbage, shredded
3 cups cooked cannellini beans
1 cup water
Salt and pepper
1 Loaf dry French bread, sliced
Olive oil
Parmesan

In hot oil, cook leeks, onion, carrot, celery, and
garlic. Add broth. Simmer 10-15 mins. Add green beans,
tomatoes, cabbage. Heat. Add beans, water, salt and
pepper. Cover, simmer until cooked (test by tasting).
Place a slice of bread in individual bowls; drizzle
with olive oil; sprinkle with Parmesan and ladle soup
on top.

1 can (15 oz.) small white beans, rinsed and drained
1 TB fresh lime juice
1 medium tomato, diced
2 TB fresh cilantro, chopped
1/8 tsp. table salt, or to taste
1/8 tsp. black pepper, or to taste
8 oz. Baked Tostidos Bite Sized Triangles


Combine avocado, beans and lime juice in a food processor; process until blended and smooth.
If you don't have a food processor, mash ingredients together with a fork.

Transfer mixture to a medium bowl and fold in tomato and cilantro. Season to taste with salt and pepper.
Serve guacamole with baked chips on the side.

Yields about 1/4 cup of guacamole and 1 ounce of baked chips per serving.

PHILLY CHEESE CAKE


1 cup graham cracker crumbs
3 Tablespoons Margarine (Parkay, recommended.), melted

16 ounces cream cheese, softened
1/2 cup sugar
1 Tablespoon lemon juice
1 teaspoon lemon peel*
1/2 teaspoon vanilla
2 eggs, separated


Combine crumbs and melted margarine; press onto bottom of 9 inch Spring
Form pan. Bake for 10 minutes at 350.

Combine cream cheese, sugar, juice, peel and vanilla mixing at medium speed
of electric mixer until well blended. Add egg yolks, 1 at a time, mixing well
after each addition. Fold in stiffly beaten egg whites; pour over crust. Bake
at 300 degrees f; for 45 minutes. Loosen cake from rim of pan' cool prior to
removing rim of pan. Chill. Servings with fresh fruit or cherry pie filling,
if desired.

tuna steak recipe - Grilled Tuna Steak Sandwiches

Grilled Tuna Steak Sandwiches

2 medium red onions
1/4 cup olive oil, plus more if needed
Salt
Ground black pepper
4 slices French bread, cut into 1/4" slices
1-1/4 to 1-1/2 lb. tuna steak, cut into 1/2" slices
4 to 5 TB pesto
Watercress

Prepare a charcoal or gas grill so that it is medium-hot.

Slice the onions horizontally into 3/8" thick slices and skewer each slice with a toothpick to
hold the rounds together. Drizzle the slices with about 2 tablespoons of oil and sprinkle lightly
with salt and pepper. Lightly brush the bread on both sides with oil.

Grill the onions for about 6 minutes on each side until they are golden brown. Move them to the
side of the grill to keep warm. At the same time, grill the bread for about 5 minutes on each side
until the slices are marked and slightly crisp. Move the bread to the side of the grill.

Drizzle the tuna with 4 teaspoons of oil and sprinkle lightly with salt and pepper. Grill the tuna for
2 to 3 minutes on each side.

Spread one side of each piece of bread with a generous amount of pesto. Arrange 3 or 4 branches
of watercress over each piece. Cut the tuna if necessary so that it fits nicely on the bread and divide
it among the sandwiches.

Remove the toothpicks from the onions and separate each slice into rounds. Top the tuna with the onions.

Serves: 4.

8 eggs

Boil water, vinegar, and oleo. Add eggs and sugar; bring to a boil

Grilled Tuna Steaks

4 ( 3/4 - inch-thick ) tuna steaks
1 cup commercial Italian salad dressing
2 teaspoons freshly ground pepper
1 lemon, quartered

Place tuna steaks in a 12 x 8 x 2 inch dish; pour salad dressing over
tuna. Cover and refrigerate 1 hour, turning once. Rmove steaks from
marinade; reserve marinade. Sprinkle pepper on both sides of steaks.
Grill, covered, over medium coals for 5 minutes on each side or until

Salmon in Tomato Cream Sauce

1 - 2 cans (15 oz, 425g each) chopped tomatoes with liquid
1 cup (250 ml) heavy cream or half-and-half
1 Tbs (15 ml) anchovy paste
Salt and freshly ground pepper to taste
Hot sauce to taste (optional)
4-6 salmon fillets, grilled, broiled, sauteed, or poached

Combine the tomatoes, cream, anchovy paste, salt, pepper, and optional
hot sauce in a saucepan and bring to a boil. Reduce the heat and
simmer uncovered until reduced by about a third, 10 to 15 minutes.
Spoon over cooked salmon. Serves 4 to 6.

Gyro-Style Pork Sandwich (George Foreman Grill)
1 pound boneless pork loin
4 tablespoons olive oil
1 tablespoon prepared mustard
1 teaspoon ground cumin
1/3 cup lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1 cup sour cream
1 cucumber, peeled, seeded, shredded and drained
1/2 teaspoon garlic, crushed
1/2 teaspoon dill
2 large pita loaves, halved (or 4 small ones)
1 small red onion, peeled and thinly sliced
Lettuce and tomato slices

Cut pork crosswise into thin slices. Slice the into strips 5 x 1/2-inch.
Combine olive oil, mustard, cumin, lemon juice, minced garlic and oregano.
Pour over pork slices. Cover and refrigerate for 1 to 8 hours. Meanwhile, in
small bowl stir together sour cream, cucumber, crushed garlic and dill.
Cover and refrigerate.
If using the oven, preheat it to 450 º. Drain marinade from pork
slices and place pork in single layer in shallow pan. Roast until crisp,
about 10 minutes.
If using the George Foreman grill (or similar), preheat the grill for 3
minutes. Drain the pork slices very well and place on the grill. Cook for
six minutes, turning once. If your grill has the optional bun warmer, place
the pitas in it to warm. Open each pita to form a pocket. Distribute pork
among each. Top each sandwich with some chilled cucumber mixture, sliced
onions, lettuce and
tomato slices.
Yield: 4 servings

Pumpkin Pudding Cake

Pumpkin Pudding Cake


1 yellow cake mix (reserve 1 cup)
3/4 cup butter, softened (1-1/2 sticks)
4 eggs
1 29-ounce can plain pumpkin (not pie filling)
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 cup sugar, divided
1/2 cup packed brown sugar
2/3 cup milk
1 cup chopped pecans
Preheat oven to 350°F. Butter bottom of a 9x13-inch pan or dish.
Using a pastry blender or fork, mix together the cake mix (less the reserved 1 cup), 1 egg and 1 stick of the butter. Press evenly into the bottom of the prepared pan.

In a medium bowl, combine the pumpkin, 3 eggs, cinnamon, ginger, cloves, brown sugar, 1/2 cup of the white sugar and milk. Mix well and pour in an even layer over the cake mix layer.

In a small bowl, mix together the reserved 1 cup cake mix, 1/2 stick butter and 1/2 cup white sugar. Sprinkle evenly over pumpkin mixture. Sprinkle the chopped pecans over all.

Bake for 1 hour and test for doneness with a toothpick. If toothpick does not come out clean, return to the oven for 10 to 15 minutes.

Grill or Broil:
Rings of fresh pineapple, sprinkled with sugar (1 ring per 2 sundaes)
Slices of purchased pound cake (1 slice per 2 sundaes)

Layer:
Caramel Sauce with Mixed Nuts (See below.)
Vanilla ice cream
Cubes of grilled pineapple
Cubes of grilled pound cake


Grill pineapple and pound cake over medium heat until lightly charred. Cut each into cubes and set aside.

Pour a couple of tablespoons of warm caramel sauce into each dish.
Top with scoops of ice cream, pineapple, cake, and more caramel sauce. Serve immediately.

Ingredients
1 purchased angel food cake

2 cups uncooked rotini pasta (spiral shaped pasta, try the kind that has

1 cup ground veal
1 cup ground beef
1 cup ground pork
1 cup fine dry bread crumbs
2 eggs, beaten
1/4 to 1/3 cup chopped onions
2 1/2 tsp salt
1/4 tsp dry mustard
1/8 tsp celery salt
1/8 tsp paprika
1/4 tsp ground black pepper

Combine the 3 meats thoroughly in a large mixing bowl, then work in the bread
crumbs. Beat eggs well, add onion and other seasonings and mix
well. Add to meats and stir or knead until blended. Pack firmly into a
buttered loaf pan, then unmold onto a flat baking pan with sides. Bake
in a moderate oven at 350* F for 1 1/2 hours or until well done.

Note*.....Unmolding the uncooked loaf and baking it on a flat pan produces
more brown crusty surface. However, loaf may be baked in the loaf pan, without
the unmolding step if preferred, but let cooked meat loaf stand in its pan for
15-20 minutes before unmolding, so meat can absorb all juices.

Spinach & Cream Cheese Casserole

1 pound hamburger
1 cup rice, uncooked
1 package frozen spinach, thawed and drained
1 tablespoon garlic salt
2 cups stewed tomatoes, drained (reserve liquid)
1 (8 oz.) package cream cheese

Brown hamburger and stir in rice, spinach, garlic salt, and tomatoes. Add
water to tomato juice to make 2 cups and add to hamburger mixture. Bring to
a boil, cover, and simmer for about 30 minutes (until rice is cooked). Add
the cream cheese and blend until cheese melts.

Coconut Bread

1/4 lb. butter or margarine
1 cup sugar
2 eggs
2 tsp. coconut extract
8 oz. sour cream
1 cup coconut
2 cups flour
1 tsp. baking powder
1 tsp. baking soda

Cream together butter and sugar. Beat in eggs and extract.
Mix in sour cream. Add coconut and mix well. Stir flour,
baking powder, and baking soda together. Add to batter,
mix well. Put batter into lightly greased loaf pan and bake
at 350 degrees for 45 to 50 minutes until done.

1 head cauliflower, broken into small florets
1 1/2 pounds potatoes, peeled and diced

1/2 cup minced onion
1 1/2 pounds diced cooked ham
2 pounds processed cheese, cubed

In a large pot, combine cauliflower and potatoes with just enough
water to cover. Bring to a boil, then reduce heat and simmer until
tender but not mushy, 10 to 15 minutes. Drain off about 1/4 of the
water. Stir in mushrooms, onion, ham and cheese. Cook, stirring, until
cheese is melted and mixture is heated through, about 10 minutes.

Melt margarine in a Dutch oven over medium heat. Add onions and celery; cook

cauliflower and potato; return to a boil. Reduce heat and simmer until
potato is tender, about 20 minutes. Stir in milk and roasted peppers and
heat about 2 minutes more. Place soup in a blender or food processor; puree
until smooth. (Note: Depending upon the size of your blender, you may need
to puree the soup in batches.)

Return soup to Dutch oven; add basil and bring to a boil stirring constantly

In a bowl mix soup, broth, sour cream, spices and mushrooms (drained).
Place chicken in a shallow baking dish, do not overlap. Pour sauce over
top. Sprinkle with paprika. Bake at 350 for 1 hour.

French Toast-Low Carb Recipe:

1/2 of a 3-ounce bag of unflavored pork rinds
Two eggs
1/4 cup heavy cream
Three packets sweetener
1/2 teaspoon cinnamon
1/2 teaspoon egg nog extract (optional)

Crumble pork rinds up until they resemble bread crumbs (use your food
processor or put them in a Ziploc bag - air removed - and roll them with a
rolling pin.) Set aside.
Beat eggs well and then mix with remaining ingredients and beat
again. Add crushed pork rinds to the egg/cream mixture and allow to sit for
approximately five minutes. Mixture will thicken.
Meanwhile, heat skillet or griddle with butter or oil, and when hot,
fry pancake style until golden brown on both sides. Serve with your favorite
low-carb maple syrup, or try the recipe below for home made low carb Maple
Syrup.

Notes:
For the best flavor, use pork rinds with a bland taste. It's also
important that you crush them well - until they are almost the
texture of dust.
Lastly, the egg nog extract is optional, but does add a nice flavor.
If you don't have any, use vanilla.

Recipe makes two servings.

Chocolate Frosted Poke Cake

Original recipe yield: 1 - 9x13 inch pan.

1 (18.25 ounce) package chocolate cake mix
1 (3 ounce) package fruit flavored gelatin mix
3/4 cup boiling water
1/2 cup cold water
2 (3.9 ounce) packages instant chocolate pudding mix
2 (1.3 ounce) envelopes whipped topping mix
3 cups cold milk

Prepare and bake cake mix according to package
directions for a 9x13 inch pan.

Poke holes in cake while still hot with a fork. Make
gelatin with 1 cup of boiling water, then stir in cold
water. Slowly pour liquid gelatin over hot cake. Cool
cake completely in the freezer before frosting.

To make the frosting: Using an electric mixer, beat
together the instant pudding, whipped topping and milk
until thickened. Pour over completely cooled cake.
Keep cake in freezer until ready to serve.

1 oz. butter

Cut fillets into serving size pieces. Combine finely chopped
peanuts and flour. Dip fish pieces into milk, then into peanut and
flour mixture, coating well. Heat butter in pan and cook fish 6 to 8
minutes (if using frozen fillets, allow an extra 3 minutes), turning
once. Drain. Serve immediately with salad

Cabbage Soup Recipe

1/2 pound bacon, coarsely chopped
12 cups shredded green cabbage (about 2-1/2 pounds)
1 medium onion, chopped
2-1/2 quarts chicken stock or five (16-oz.) cans broth
1 cup half-and-half
2 teaspoons salt (depending on saltiness of broth)
1/2 teaspoon milled pepper
Grated Swiss cheese

In a large stockpot, fry bacon until crisp over medium-high heat. Remove
and set aside. To 2 tablespoons drippings in the pan, add the cabbage and
onion, reduce heat to medium and saute, stirring occasionally, for 10
minutes or until the cabbage is wilted. Do not let it brown. Add the chicken
stock and simmer until the cabbage and onions are tender, stirring often.
Remove from heat and transfer 3 cups (mainly cabbage) of soup to a blender
and puree. Return to soup pot and stir in the half-and-half, salt and pepper
Serve garnished with crisp bacon and shredded Swiss cheese.
Yield: 14 cups soup

6 c. Old fashioned oats

½ c. dry milk powder

½ c. Sesame seed

1 tsp. salt

1 c. Wheat germ

1 c. Honey

½ c. Brown sugar

½ c. Cooking oil

3 tsp. Cinnamon

1 c. Raisins or Apricots (added after baking)

Optional:

1 ½ c. Shredded coconut

¾ c. coarsely chopped Almonds, Walnuts or Pecans



Combine dry ingredients.

Add oil and honey mixing well.

Spread in 2 9x12 baking pans.

Bake at 300 degrees for 30 to 40 minutes, stirring every 10 minutes.

Remove from oven & stir in dried fruit.

Stir during cooling to prevent lumping.

Store in covered jars or plastic bags.

Makes 12 Cups.

PIZZA BURGERS

2 pounds ground beef
2 large onions, chopped
½ bottle grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon oregano
15½ ounce size can Contadina Pizza Sauce
Green pepper, cut fine
1 cup mushrooms, cut fine
1 small jar chopped, stuffed olives
English muffins
Grated or chopped American or Mozzarella cheese

Fry meat until lightly browned after seasoning to taste with salt and pepper
Pour off grease. Add remaining ingredients except muffins and American or
Mozzarella cheese. Simmer 30 minutes. Cool. Spread mixture on English muffin
halves. Sprinkle chopped American or Mozzarella cheese on top and bake at
350° for 15 minutes. Will make 35 to 45. Mix not used can be frozen, but not
after it is baked. Freeze after simmering and cooling.

Fresh Tomato Salad

Serves: 6 to 8

5 tomatoes, diced
1 onion, chopped
1 cucumber, sliced
1 green bell pepper, chopped
1/2 cup chopped fresh basil
1/2 cup chopped parsley
2 tablespoons crushed garlic
salt and pepper to taste
2 tablespoons white wine vinegar

In a large bowl, combine the tomato, onion, cucumber, bell pepper,basil,
parsley, garlic and vinegar. Toss and add salt and pepper to taste. Chill
and serve.

Gator Taters

Gator Taters
Baked Grilled potatoes:
4 potatoes
Oil
1/2 pound butter

Potato sauce:
1 sweet onion, chopped
1 cup mayonnaise
1/4 cup sour cream
Salt and pepper

Fried Gator:
2 pounds gator tail cut into chunks
Buttermilk
Flour
Salt and pepper
16 ounces vegetable oil

1 cup grated cheddar cheese
1 cup grated Monterey jack cheese
Sliced green onions, to garnish

Wash and coat potatoes with a little bit of oil. Pierce each potato with a
fork, wrap in tin foil, place directly on hot coals, and cook for
approximately 45 minutes. Use tongs to turn potatoes often.

In a bowl, combine all of the ingredients to make the potato sauce, and mix
well.
In a large bowl, toss the gator chunks into the buttermilk, and dredge with
flour that has been seasoned with salt and pepper. Using a large skillet,
heat oil to 350º Fry gator chunks until golden
brown, approximately 4 to 5 minutes. Split potatoes and top with butter and
potato sauce. Top potatoes with 2 pieces of fried gator chunks on top and
sprinkle with cheese and green onions.

2 cups Semi-sweet chocolate chips
3 (8 oz) pkgs Cream cheese, softened
1 (14 oz) can Sweetened condensed milk
4 Eggs
2 tsps Vanilla
1 chocolate wafer pie crust

Preheat oven to 300. In saucepan, melt chips over LOW heat, stirring
constantly. In bowl, beat cream cheese until fluffy. Beat in milk
until smooth. Add melted chips and remaining ingredients. Pour into
crust. Bake for 1 hour and 5 minutes, until center is set.

broccoli soup

Delicious Crock Pot Broccoli and Cheese Soup
20 oz. frozen broccoli, can use fresh
2 Cups cut up, cubed raw potatoes
2/3 onion, chopped
2-3 carrots, grated
1 (10 3/4 oz.) can cream of mushroom soup
1 (10 3/4 oz.) can cream of chicken soup
4 Cups water
1 pound Velveeta cheese cut into small cubes
salt and pepper to taste

Place all ingredients in slow cooker. Cook on high for 1 hour. and low for
4-5 hours.
After the soup is cooked, remove about 1/2 of the potatoes and blend them
with a hand blender and return them to the pot.

Easy Pineapple Cheesecake

1 (16 ounce) container sour cream
1 (3.4 ounce) box instant vanilla pudding
1 (8 ounce) can crushed pineapple, undrained
1 prepared graham cracker pie crust

To cut calories, you can use light sour cream and sugar-free instant
pudding.

In large bowl, beat sour cream, pudding mix and pineapple with
electric hand mixer 2 minutes.

Pour filling into crust and refrigerate several hours or overnight.

cauliflower soup - Cauliflower Chowder

1 tbs reduced calorie margarine
1 small vidalia onion, chopped
2 medium stalk celery, chopped
1 9oz cans vegetable broth
1 1/2 cup water
1 head cauliflower, finely chopped
1 large potato, peeled and finely chopped
1 cup fat free evaporated milk
1 6 oz sweet red pepper, roatsed, drained and chopped into fine

Melt margarine in Dutch oven over medium heat. Add onions and

bring to a noil. Add cauliflower and potato, return to a boil.
Reduce heat and simmer until potato is tender, about 20min. Stir in
milk and roasted pepper, about 2min more. Place soup in blender,
puree until smooth. Return soup to dutch oven, add basil and bring
to a boil, stirring constantly.
