Famous Recipes - Grated Potato and Cheese Casserole - Potato Casserole - Comfort Food

GRATED POTATO AND CHEESE CASSEROLE

This is a great 'comfort food' casserole!

2 large onions, sliced
2 cloves garlic, minced
2 tbsp butter
2 lbs potatoes
1 1/2 c grated cheddar cheese
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
1 1/2 c milk
1/2 c whipping cream or additional milk
2 tbsp chopped fresh parsley

Cook onions and garlic in butter in a large skillet until tender and
browned, about 5 minutes. Peel potatoes and grate into shreds.

Rinse shreds and drain well. Combine potatoes with onion and garlic,
cheese, salt, pepper and nutmeg. Add milk, cream and parsley. Place
mixture in a 3L buttered baking dish. Bake, uncovered, in a
preheated 400F oven for 1 to 1 1/4 hours.

Famous Recipes - Pound Cake Recipe - Peach Pound Cake

Peach Pound Cake

1 cup, plus 2 Tbsps. butter
2 1/4 cups sugar
4 eggs
1 tsp. vanilla
3 cups all-purpose flour, divided
1 tsp. baking powder
1 tsp. salt
2 cups chopped fresh peaches

Grease a tube pan with 2 tablespoons butter. Sprinkle pan with 1/4 cup sugar.
In a bowl, gradually cream remaining sugar with rest of butter. Add eggs, one
at a time, beating well after each addition. Add vanilla and mix well.
Combine 2 3/4 cups flour, the baking powder and salt, gradually add to creamed
mixture, beating until well-blended. Dredge peaches in rest of flour, and then
fold them into batter. Pour batter into prepared pan and bake at 325 degrees for
one hour and ten minutes. Remove from pan and cool completely.

Make sure and read the recipe through before making it so you can divde the
flour and sugar.

Famous Recipes - Shepards Pie - Shepherd's Pie

2 lb Potatoes
1/4 c Sour cream, fat free
1 T Margarine, reduced calories
1/8 t Salt or to taste
2 t Olive oil
1 c Onion, chopped
2 medium Carrots, Diced
2 sticks Celery, diced
1 lb Turkey breast, ground, uncooked
3 t Flour, all purpose
1 T Rosemary, fresh chopped or
1 t Rosemary, dried
1 t Thyme
1/2 t Salt
1/4 t Pepper

1. Preheat oven to 400°F.
2. Place potatoes in a large saucepan.
Pour in enough water to cover potatoes.
Set pan over hi heat; bring to a boil.
Reduce heat to medium; simmer 10 minutes, until potatoes are fork tender.
Drain potatoes; transfer to a large bowl.
Add sour cream; margarine.
Mash until smooth.
Season with salt; pepper.
Set aside
3. Meanwhile, heat oil in a large skillet over medium-hi heat.
Add onion, carrots; celery.
Cook 3 minutes until soft.
Add turkey; cook 5 minutes, until browned.
Break up meat as it cooks.
Add flour, rosemary, thyme, salt & pepper.
Stir to coat.
Add broth & bring to a simmer.
Simmer 3 minutes, until mixture thickens
4. Transfer turkey mixture to a 9" deep pie plate.
Spread mashed potatoes over top & using the back of a spoon,
make decorative swirls over the top.
Bake 30 minutes, until potatoes are golden.
Slice into 6 pieces & serve.

Prep time 25 minutes; cook time 42 minutes

Chefs tips:
1. We renovated shepherds pie by using turkey in place of lamb or beef.
2. Swapping non fat sour cream for most of the butter in the mashed potato
topping.
3. Adding reduced calorie margarine instead of butter.

Rice Cooker Spinach Rice with Tuna

2 cups water
1 cup long grain rice
1 Tbs. onion flakes
7 ounces canned oil-packed tuna, drained with oil reserved
1 tsp. lemon zest
10 ounces creamed spinach, thawed if frozen
1/2 cup shredded cheddar cheese, optional
Spray rice cooker pan with nonstick cooking spray. Add water, rice,
onion flakes and reserved tuna oil. Season with salt and pepper to
taste. Cover and cook about 20 minutes, or until rice cooker shuts
off. Gently stir in tuna, lemon zest and spinach. Cover and allow to
stand 10 minutes more before serving sprinkled with cheese.

This recipe serves 4 people. Due to the nature of this recipe, it
adjusts the number of servings in multiples of 4 only.

Famous Recipes - tomato salsa recipes - Salsa Ranchera

Salsa Ranchera

1 lb tomatoes, broiled
4 serrano chiles or any fresh, hot green chiles, charred
1 garlic clove, roughly chopped
2 T vegetable oil
2 T finely chopped white onion
1/2 t salt, or to taste

Blend the tomatoes. chiles, and garlic together until fairly smooth.

Heat the oil, and fry the onion gently, without browning, until it is
translucent. Add the blended ingredients and the salt and cook over fairly
brisk
heat for about 5 minutes, stirring and scraping the bottom of the pan until
the
sauce has reduced a little and is well seasoned.

Note: The sauce can, of course, be made several hours ahead; it will keep
one day to another. It also freezes well, but as it tends to separate it is
best to defrost and blend briefly before using.

Yield: About 1 cup

Homemade Reese Type Cups/Balls

2 c. graham crackers, crushed fine
1 lb. box 10x sugar
2 sticks melted butter
12 oz. crunchy peanut butter
1/2 bar paraffin wax
6 oz. semi-sweet chocolate chips
Mix first 4 ingredients well and roll into bite size balls. Freeze on tray.
Melt wax and chocolate chips in pot. Dip balls into chocolate and lay on waxed
paper to cool.

Fish Stick Enchiladas

Ingredients

8 Crunchy Golden Fish Sticks
1 can cream of mushroom soup
1 small onion, chopped
1 can (4.5 oz) chopped chilies
1 (8 oz) container sour cream
1 cup shredded cheddar or Monterey Jack cheese, divided
8 (8-inch) flour tortillas


 
Method: Preheat over to 375°.

In a large bowl, mix soup, onion, chilies, sour cream, and ½ cup cheese.
Place a frozen Fish Stick in center of a tortilla. Place 2 Tbsp of sauce along the
side of the stick, roll tortilla, and place seam down in a rectangular
casserole dish. Make 8 wrapped tortillas. Spread remainder of sauce on top of
tortillas.

Bake at 375° for 20 minutes. Sprinkle remaining ½ cup of cheese on top and
cook 5 more minutes.

Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
3 bananas, mashed
1/4 cup milk
1 teaspoon vanilla extract
2 eggs
1 1/2 cups all-purpose flour
1/2 cup wheat bran
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt


Directions
1. Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.

2. In a large mixing bowl, cream butter and brown sugar together until fluffy. Add bananas, milk, vanilla and eggs; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts. Pour batter into prepared muffin cups.

3. Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.

Chili Nacho Dip

1 can (15 ounces) chili
1/4 cup cream cheese
1 bag (16 ounces) tortilla chips

Optional Toppings:
Sharp cheddar cheese, shredded
Green chili peppers rinsed, seeded and chopped
Black olives
Sour Cream
Guacamole

Combine the chili and cream cheese in a microwaveable bowl, cover with
a vented lid and cook on high power for 3 minutes. Stir the cheese
into the chili until thoroughly blended. Cook for an additional 1 minute, if
needed.
Serve with the tortilla chips and an assortment of your favorite toppings
Servings: 16

Colcannon

For centuries, this traditional southern Irish potato dish has remained
popular. Studded with Chopped cabbage and onion, its absolutely
irresistible. Serve the leftovers as potato pancakes the next day.

1 1/2 lbs potatoes, peeled and cut into 2 inch chunks
1 teaspoon salt, divided
1 1/2 cups chopped green cabbage
1/3 cup finely chopped green onions
2 cups boiling water
2/3 cup milk
2 tablespoons butter or margarine
1/8 teaspoon finely ground pepper

1. Place potatoes with cold water to cover by 2 inches and ½ tsp
salt in large saucepan.
2. Bring to a boil for 5 minutes.
3. Add cabbage and boil for 10 more minutes until potatoes are
tender.
4. Meanwhile, place green onion in sieve, pour boiling water over
them and drain.
5. Add drained onion to a medium saucepan with milk, butter,
remaining ½ tsp salt and pepper, bring to a boil then remove from heat.
6. Drain cooked potatoes and cabbage and return to large saucepan.
7. Beat on low speed with hand held mixer until coarsely mashed.
8. Increase speed to high and gradually add milk and onion mixture
and continue to beat until potatoes are light and fluffy.

Chocolate Custard (Flan de Chocolate)

For the caramel sauce:
1/2 cup (125 ml) sugar
2 Tbs (30 ml) water

For the custard:
4 cups (1 L) milk
8 eggs, lightly beaten
3/4 cup (180 ml) sugar
3 Tbs (45 ml) cocoa powder
2 Tbs (30 ml) dark rum (optional)
1 tsp (5 ml) vanilla extract
A pinch of salt

To make the caramel sauce, combine the sugar and water in a small
saucepan and bring to a boil over moderate heat. Cook, stirring
frequently, until the sugar is a dark golden brown. Pour the sugar
carefully (it will be extremely hot) into a 6-cup (1.5 L) mold or
into 6 individual custard cups or ramekins, tilting the mold or cups
to coat the bottom and sides with the molten sugar. Set aside.

To make the custard, heat the milk until small bubbles form around
the sides of the pan. Remove from the heat and let cool. Whisk
together the remaining ingredients and stir into the milk. Strain
into the mold or custard cups. Place in a pan filled with enough
water to come halfway up the side of the mold and bake in a
preheated 350F (180C) oven until the tip of a knife inserted in the
center comes out clean, about 1 hour. Cool to room temperature and
chill in the refrigerator until ready to serve. To serve, run the
blade of a knife around the edge of the mold before inverting onto a
serving platter. Serves 6.

Pedro's Mexican Restaurante Snickers Chimichangas

7 (2 ounce) Snickers candy bars
4 (12-inch) burrito-size tortillas
2 tablespoons melted butter or margarine
Vanilla ice cream
Maraschino cherries and whipped cream, optional

Cut 6 Snickers bars into 4 equal pieces. Arrange 6 pieces in the
center of each tortilla. Fold up burrito style; seal ends with a
toothpick. Transfer to small cookie sheet. Brush all sides of each
burrito with the melted butter then cover with plastic wrap.
Refrigerate 1 hour. (Can be made ahead. Refrigerate up to 24 hours.)

Preheat oven to 400 degrees F. Bake burritos until golden brown and
crisp, 20 minutes.

Coarsely chop remaining Snickers bar. Place each chimichanga in a
shallow dessert bowl. Serve with ice cream, whipped cream, cherries
and chopped Snickers bar.

Makes 4 servings.

SWEET & CREAMY PUMPKIN DIP
Thanksgiving or Christmas

Sweet and Creamy Pumpkin Dip is the perfect appetizer or dessert to
serve with Gingersnaps for any fall or winter gathering and it is so
easy to make!

1 package (8 ounces) cream cheese, softened 2 cups confectioners sugar
1 can (15 ounces) pumpkin
1 Tblsp Pumpkin Pie Spice
1 tsp Pure Orange Extract
1/2 teaspoon Ground Ginger
Gingersnap cookies

1. Blend cream cheese and confectioners sugar until smooth in a mixer or
food processor. Add pumpkin and remaining ingredients. Mix or blend
thoroughly.

2. Chill 30 minutes or until ready to serve.

Serve with Gingersnap cookies and/or Red Delicious apples or pears,
cored and cut into 1/2-inch slices, leaving skin on for color. Toss
fruit with a little lemon juice mixed with water to prevent browning.

Makes 20 (2 tablespoon) servings

Girl Scout Cookies Olde English Trifle with Old Fashioned Shortbread
Trefoils Serves 6 to 8

3-5 ounces day-old sponge cake broken into bite size pieces
1 box (10oz.) Girl Scout Trefoils shortbread cookies
3 cups sherry
2 tablespoons brandy
3 cups fruit such as berries or peaches
2 cups heavy cream
1 cup toasted almonds
siced strawberries for garnish
toasted coconut for garnish (optional)

Custard
4 egg yolks
2 tablespoons caster (extra fine) sugar
1 cup whipped cream
3 drops vanilla extract

To make custard:
Whisk egg yolks and sugar together. Bring cream to a boil. Pour over yolk mixture, whisk together and return to saucepan, stirring constantly, until mixture thickens enough to coat the back of a spoon. Set aside to cool.

Soak cake pieces with brandy and sherry. In martini glasses, place a layer of cake and cookies and top with custard, repeating once more to form 2 layers. Then top whipped cream and garnish with strawberries and if you like, toasted coconut.

Famous Recipes - mushroom soup recipe - Rich Viennese Potato Soup

Rich Viennese Potato Soup

7 C plus 3 T beef broth OR chicken broth, divided
2 C onion, sliced
2½ C sliced leeks
1½ t dried marjoram
8 C russet potatoes, peeled and cubed
¾ C heavy cream
½ t ground black pepper
1 pinch ground cardamom
½ lb fresh mushrooms, sliced
salt and pepper to taste
½ C chopped and precooked carrots
1 C cooked and diced potatoes

1 Place 1 T oil and 2 T broth in a large, non-stick pot over medium

heat. Add the onions, leeks and marjoram and saute for 15 minutes, or

until vegetables are tender.
2 Add the potatoes and 7 C broth, reduce heat to low, cover and

simmer for 25 minutes. Add the heavy cream, ground black pepper and

cardamom. Puree the soup in small batches in a blender or food

processor.
3 Place the mushrooms and the remaining 1 tablespoon of broth in a

large skillet over medium heat and saute until the liquid evaporates

and the mushrooms are golden in color. Season with salt and pepper to

taste. Add the mushrooms, precooked carrots and precooked potatoes to

the pureed soup. Stir together and serve.

Makes 8 servings.

Famous Recipes - Mexican Lasagna

3 pounds ground beef
1 large onion, chopped
4 cloves garlic, finely crushed
1 large jar salsa
2 packages taco seasoning mix
2 (15-ounce) cans tomato sauce
1 (15-ounce) can whole kernel corn (retain juice)
Salt and pepper to taste
1 pound shredded cheese
24 small thick flour tortillas (or substitute corn tortillas, if desired)
Oil
Salsa, optional
Sour Cream, optional
Shredded Lettuce, optional
Black olives, sliced
Crushed Corn Tortilla Chips

Grease a 9x13-inch casserole dish with cooking spray or oil, set aside. In
a very large skillet brown the beef, onion and garlic well, drain. Return
the beef mixture to the skillet and add salsa, taco seasoning, tomato sauce,
corn (with juice), salt and pepper. Bring the beef mixture to a boil, then
cook on medium heat until the liquid is mostly gone, stirring occasionally.
Meanwhile, heat the oil in a small skillet, then cook the tortillas in the
oil for several seconds on each side. Drain the tortillas on paper towels,
or pat dry. Cut into squares, reserving the rounded ends. Layer the bottom
of the baking dish with the doubled tortillas, using doubled end pieces to
fill in the blank spaces. Spread about 1/3 of the meat mixture on top of
the tortillas. Sprinkle with 1/3 of the cheese. Repeat this process until
you have 3 layers, reserving the last 1/3 pound of cheese. Bake in 350 F
oven for 25 minutes. Remove from the oven, and add the remaining cheese.
Return to the oven for another 5 minutes or until the cheese has melted. Let
lasagna sit for 10 minutes before serving. Garnish with the salsa, sour
cream, shredded lettuce, black olives and crushed tortilla chips just before
serving, if desired. Serves 8 or more.

4 Slices bacon, cut up
2 Cup Coarsely shredded cabbage
2 (14-1/2 oz.) cans Beef Broth
1 (16 oz.) pkg. Green Giant Frozen Pasta And Vegetables
Accent Garden Herb Seasoning

Cook bacon in large saucepan until crisp; remove bacon and drain on paper
towels. Crumble bacon. Cook cabbage in broth until crisp tender. Stir bacon,
broth, frozen vegetables and pasta, and water into cabbage.
Bring to a boil; stir. Reduce heat; cover and simmer 6 to 8 minutes or until
vegetables are tender.

preheat oven to 350`
1# HAMBURGER-
1 CAN TOMATO SOUP-
1 GREEN PEPPER CHOPPED-
1 CAN FRENCH STYLE GREEN BEANS-
WHIPPED POTATOES- (ENOUGH TO COVER THE 9x9 PAN YOU'RE GOING TO PUT
THIS IN)
LOTS OF GRATED CHEESE- (CHEDDAR OR MONTEREY-JACK IS GOOD!)

Brown the meat in a skillet then add the chopped green pepper.
Add the can of tomato soup (NO water or milk added)
Heat through.
Layer it in the bottom of your pan.
Layer the french-style green beans on top of the meat mixture.
Put "plooches" of potatoes on top of the beans. (In other words, a
large spoonful of potatoes with a crater!)
Fill the tater-crater with lots of cheese!
Bake it until the cheese is bubbly!

Famous Recipes - pork loin recipes - Pork Cacciatore

Pork Cacciatore

1 lb. pork loin or shoulder, cut into 1 inch pieces, trimmed
1 Tbsp. vegetable oil
3 cloves garlic, minced
8 ounces sliced mushrooms
1 tsp. Italian seasoning
2 cups prepared pasta sauce
1/4 cup dry red wine or cooking wine
1/4 cup Parmesan cheese

Heat oil in a large non-stick skillet over medium high heat. Cook
pork pieces until no longer pink on outside, about 3 to 4 minutes.
Add garlic, Italian seasoning and mushrooms. Cook 5 minutes longer.
Stir in pasta sauce and wine. Simmer for 10 to 15 minutes until
pork is tender and sauce thickens slightly. Serve sprinkled with
Parmesan cheese.

Serve over rice or angel hair pasta

Famous Recipes - pork tenderloin recipes - Barbecued Pork

Barbecued Pork

Ingredients:
3 tb Honey
2 tb Commercial hoisin sauce
2 tb Reduced-calorie catsup
1 tb Low-sodium soy sauce
1/8 ts Chinese five-spice powder
3 Drops red food coloring -(optional)
2 (3/4-pound) pork tenderloins
1/4 c Reduced-calorie catsup
2 tb Sesame seeds

Combine first 6 ingredients; stir well, and set aside. Trim fat from pork, and place in a large shallow dish. Pour honey mixture over pork. Cover and marinate in refrigerator 8 hours, turning pork occasionally. Remove pork from marinade, reserving marinade. Place pork on a microwave-safe roasting rack. Cover with wax paper, and microwave at MEDIUM HIGH (70% power) 7 minutes. Brush pork with reserved marinade; rotate rack a quarter-turn. Cover and microwave at medium high 6 to 8 minutes or until meat thermometer registers 160 degrees; set aside. Place remaining marinade in a glass measure; microwave at HIGH until mixture boils. Brush over pork; cut into 1/4-inch slices. Serve warm with catsup and sesame seeds.
