Famous Recipes - Olive Garden Zuppa Toscana

OLIVE GARDEN ZUPPA TOSCANA

1 pound Italian sausage
2 large russet baking potatoes, sliced in half,
and then in 1/4-inch slices
1 large onion, chopped
1/2 can Oscar Meyer Real Bacon Bits (these are
less fatty than real bacon)
2 cloves garlic, minced
2 cups kale or Swiss chard, chopped
2 cans chicken broth
1 quart water
1 cup heavy whipping cream

Cook sausage in a 300 degree F oven. Bake approximately 1/2 hour; drain on
paper towels and cut into slices.

Place onions, potatoes, chicken broth, water, garlic in pot, and cook on
medium heat until potatoes are done. Add sausage, bacon, salt, and pepper to
taste, and simmer for another 10 minutes. Turn to low heat, add kale and cream.
Heat through and serve.

Quick Vegetarian Chili


This dish is great when you need something hot, quick, and
nutritious. The spiciness of the chili can be decreased simply by
seeding the jalapeño.

1 tablespoon olive oil
1/2 cup chopped onion
2 garlic cloves, minced
1 1/2 cups chopped zucchini
1 cup chopped red bell pepper
1 cup chopped green bell pepper
4 cups chopped tomatoes (about 1 3/4 pounds)
1 tablespoon chili powder
1 teaspoon Old Bay seasoning
1/4 teaspoon black pepper
2 (5.5-ounce) cans spicy-hot vegetable juice
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can kidney beans, rinsed and drained
1 jalapeño pepper, minced

Heat oil in a Dutch oven over medium-high heat; add onion and
garlic. Cook 2 minutes or until tender, stirring constantly. Add
zucchini and bell peppers; cook 5 minutes, stirring frequently. Add
tomatoes and remaining ingredients, stirring well to combine. Cover,
reduce heat, and simmer 20 minutes, stirring occasionally.

Yield: 6 servings (serving size: 1 1/3 cups)

So GOOD They Could Be Illegal Oven BBQ Ribs

3-5 lbs pork ribs
1 (8 ounce) jar honey
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon garlic powder
2 tablespoons parsley flakes
1/2 teaspoon onion powder
1/4 teaspoon celery salt
1/2 cup dark brown sugar
1/4 teaspoon fresh ground pepper
1 medium onion, grated or finely chopped
12 ounces barbecue sauce your favorite
1/4 cup white sugar
1 12 ounce can of Fresca

Place ribs in a large Aluminum dish pan----In large bowl mix all other
ingredients one at a time starting at the bottom of the ingredient list---mix well--pour over ribs in dish pan and bring to a boil reduce heat and simmer 6 minutes---cover dish pan with heavy foil and place in oven at 350 for one hour or until
desired tenderness level.

Gazpacho Cream (Salmorejo Cordobes)

Note: This dish contains raw eggs. If salmonella contamination is a
concern in your area, please use pasteurized eggs or egg substitute.

1 lb (450 g) stale bread
1 1/2 lbs (675 g) ripe tomatoes, peeled, seeded, and chopped
3-6 cloves garlic, chopped
1 green bell pepper, cored, seeded, and chopped
2 eggs
1/4 cup (60 ml) red wine vinegar
Salt and freshly ground pepper to taste
1/2 cup (125 ml) extra-virgin olive oil
4 oz (110 g) thinly sliced serrano or prosciutto ham, cut into thins strips
2-3 hard-boiled eggs, sliced

Soak the bread in enough water to cover for 15 minutes. Squeeze
the water from the bread and discard the water. Puree the bread,
tomatoes, garlic, and bell pepper in an electric blender or food
processor. Add the eggs, vinegar, salt, and pepper and, with the
motor running, add the oil in a thin stream. Spoon the mixture into
shallow bowls or plates and top with the strips of ham and sliced
eggs. Serves 4 to 6.

Famous Recipes - Cincinnati Skyline Chili

Cincinnati Skyline Chili
Ingredients
2 tbsp oil
2-1/2 pounds ground beef
1 quart cold water
1 (6-ounce) can tomato paste
2 large onions (diced)
1-1/2 tbsp vinegar
1 tsp Lea & Perrin Worcestershire sauce
1 clove garlic (crushed)
2 tbsp chili powder
5 bay leaves
2 tsp cinnamon
1 tsp allspice
2 tsp cayenne pepper
1-1/2 tbsp unsweetened cocoa
Salt & pepper to taste

Instructions
In a heavy guage pot, heat oil, add beef until brown, add onions and water
and bring to a boil. Reduce to a simmer and add tomato paste and all other
ingredients and let simmer 1-1/2 to 2 hours. Adjust with salt & pepper to taste.
Remove bay leaves before serving.
In Cincinnati the true enthusians have their Chili 1 to 5 ways:
1. Plain 2."Two Way" - Spaghetti & Chili
3."Three Way" - Chili, Spaghetti, and Cheddar Cheese
4."Four Way" - Chili, Spaghetti, Cheddar Cheese, and Onions
5."Five Way" - Chili, Spaghetti, Cheddar Cheese, Onions and Kidney Beans

BASAKWARDS RAVOLI

2 lbs. ground beef
1 med. onion
1 clove garlic, minced
1 tbsp. salad oil
1 (10 oz.) pkg. frozen chopped spinach
2 (1 lb.) cans spaghetti sauce with mushrooms
1 (8 oz.) cans spaghetti sauce with mushrooms
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. salt
Dash of pepper
1 (7 oz.) pkg. bow tie noodles
1 c. sharp processed cheese shredded
1/2 c. soft bread crumbs
2 well beaten eggs
1/4 c. salad oil

Brown first 3 ingredients in salad oil. Cook spinach according to package;
drain. Keep liquid and add water to make 1 cup. Stir spinach liquid and next 5
ingredients. Combine spinach and remaining ingredients. Spread in 13"x9"x2"
baking dish. Top with meat sauce. Bake at 350 degrees for 30 minutes. Let stand
10 minutes before serving. Makes 8 servings.

Kid's Wrap
Makes 2 servings

4 tsps Dijon honey mustard
2 (8-inch) fat-free flour tortillas
2 slices reduced-fat American cheese, torn into halves
4 ozs fat-free, reduced-sodium oven-roasted turkey breast
1/2 cup shredded carrots (about 1 medium)
3 romaine lettuce leaves, washed and torn into bite-size pieces

Spread 2 teaspoons mustard evenly over one tortilla.

Top with 2 cheese halves, half of turkey, half of shredded carrots and
half of torn lettuce.

Roll up tortilla and cut in half. Repeat with remaining ingredients.

Sherry's Apple Butter

5 pounds Tart Cooking Apples
7 cups Water
2 cups Apple Cider
4 Cups Sugar
1 teaspoon Ground Cloves
1 teaspoon Allspice
1 tablespoon Cinnamon
1/8 teaspoon Nutmeg

Wash and quarter apples. Put them in a large preserving kettle with
the water & cook for about 15 minutes, or until the apples are soft.
Press apples through a fine sieve to make about 2 quarts apple
puree. Boil the cider down to 1 cup and add to the apple puree with
remaining ingredients. Bring to a boil and cook gently for 30
minutes, stirring frequently. Pour into an ovenproof dish or
casserole and bake, uncovered, in a slow oven (250 degrees) for
about 6 hours, or until thick, stirring occasionally. Pour into hot
jars & seal at once.

Easy, Crockpot All-Day Meatloaf and Vegetables

Makes 6 servings

4 large, or 6 medium potatoes, sliced
6 carrots, sliced
1/4 tsp. salt
1 & 1/2 lbs. ground beef
2 eggs, beaten
3/4 cup cracker crumbs
1/3 cup ketchup
1/3 cup finely chopped onions
3/4 tsp. salt
1/4 tsp. dried marjoram
1/4 tsp. black pepper

Place potatoes and carrots in slow cooker. Sprinkle with 1/4 tsp. salt.
Combine remaining ingredients. Mix well and shape into loaf. Place loaf on
top of vegetables, making sure that it doesn't touch sides of slow cooker.
Cover. Cook on Low 8-10 hours.

CHICKEN SALAD TEA SANDWICHES WITH SMOKED ALMONDS
Makes 24 tea sandwiches

3 cups chicken broth or water
2 whole boneless chicken breasts with skin (about 1
1/2pounds) halved
I cup mayonnaise
1/3 cup minced shallot
1 teaspoon minced fresh tarragon leaves
24 very thin slices homemade-type white bread
1/2 cup finely chopped smoked almonds (about 2 ounces)

In a deep 12-inch skillet bring broth or water to a boil
and add chicken breasts in one layer. Reduce heat and
poach chicken at a bare simmer, turning once, 7 minutes.
Remove skillet from heat and cool chicken in cooking
liquid 20 minutes. Discard skin and shred chicken fine.
In a bowl stir together chicken, 1/2 cup of mayonnaise,
shallot, tarragon, and salt and pepper to taste. Make
12 sandwiches with chicken salad and bread, pressing
together gently. With 2 inch round cutter cut 2
rounds from each sandwich. Put almonds on a small
plate and spread edges of rounds with remaining 1/2
cup mayonnaise to coat well. Roll edges in almonds.
Sandwiches may be made 2 hour ahead, wrapped in plastic
wrap, and chilled.

Ingredients
2 tablespoons butter or margarine
1 teaspoon minced garlic
12 ounces boneless, skinless, chicken breasts, cubed

1/4 teaspoon dried sage
1/4 teaspoon freshly ground black pepper
1/4 teaspoon white pepper
Pinch ground red pepper
1/3 cup chopped green onions
1 cup heavy or whipping cream
12 ounces dried thin spaghetti, cooked according to package directions
2 tablespoons chopped fresh parsley
Freshly grated Parmesan cheese
1/4 teaspoon onion powder

Directions
1. Melt butter in large skillet over medium-high heat. Add garlic and
cook 30 seconds. Stir in chicken, salt, thyme, onion powder, sage, and
peppers; cook until lightly browned, about 3 minutes. Stir in green
onions; cook 1 minute more. Gradually add cream. Increase heat to high
and boil until slightly thickened, about 2 minutes.

2. Combine chicken mixture, hot pasta, and parsley in serving bowl; toss
to mix. Serve with Parmesan cheese. Makes 4 servings.

Salisbury Steak with Mushroom Gravy

Prep: 10 minutes
Cook: 20 minutes
Servings: Serves 4

2 lbs. lean ground beef
1/2 cup finely chopped onion
1/2 cup saltine cracker crumbs
2 egg whites, slightly beaten
4 Tbsp. milk
1 Tbsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. pepper
1 jar (12 ounces) brown beef gravy
4 ounces mushrooms, sliced
2 Tbsp. water


In medium bowl, combine ground beef, onion, cracker crumbs, egg white,
milk, horseradish, salt and pepper. Mix lightly but thoroughly. Shape into 4 oval
1/2-inch thick patties.

Heat large nonstick skillet over medium heat until hot. Place beef patties
in skillet. Cook 7-8 minutes, turning once or until centers are no longer pink
and juices run clear. Center of patty should register 160ºF on an instant read
meat thermometer. Remove from skillet and keep warm.

In same skillet, combine gravy, mushrooms, and water. Cook over medium heat
3-5 minutes or until mushrooms are tender.

Serve gravy over Salisbury Steak and mashed potatoes if desired.
